Ingredients
  • 1 medium pumpkin (about 3 pounds), peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced

  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • 1 large can (14 ounces) chickpeas, drained and rinsed
Instructions
  1. In a large saucepan or Dutch oven, heat a drizzle of olive oil over medium heat.
  2. Add the onion and cook until softened, about 5 minutes.
  3. Add the garlic, ginger, turmeric, cumin, and cinnamon and cook until fragrant, about 1 minute more.
  4. Stir in the pumpkin and chickpeas and cook until heated through, about 5 minutes.
  5. Pour in enough vegetable broth or water to cover the vegetables by about 1 inch.
  6. Bring to a boil, then reduce heat and simmer until the pumpkin is tender, about 20 minutes.
  7. Use an immersion blender or transfer the mixture to a regular blender and puree until smooth.
  8. Season with salt and pepper to taste.
