Ingredients
  • 4 eggs
  • 1/4 cup almond milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 lb paleo-friendly sausage, cooked and crumbled
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1/4 cup chopped fresh parsley
  • 1 tbsp coconut oil
Instructions
  1. In a bowl, whisk together eggs, almond milk, salt, and pepper.
  2. Stir in cooked sausage, diced peppers, and parsley.
  3. Heat coconut oil in a non-stick skillet over medium heat.
  4. Pour egg mixture into the skillet and cook for 3-4 minutes, or until the edges start to set.
  5. Using a spatula, gently lift the edges of the omelette to allow any uncooked eggs to flow underneath.
  6. Cook for an additional 2-3 minutes until the omelette is mostly set.
  7. Carefully fold the omelette in half and cook for another minute to ensure the inside is fully cooked.
  8. Slide the omelette onto a plate and serve hot.
