Ingredients
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 fennel bulb, chopped
  • 1 cup vegetable broth
  • 1/2 cup dry white wine
  • 1/4 teaspoon saffron threads
  • 1 pound mussels, scrubbed and debearded
  • 1 pound clams, scrubbed
Instructions
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and cook until softened, about 5 minutes.
  3. Add the garlic and fennel and cook for 1 minute more.
  4. Add the vegetable broth, white wine, and saffron threads to the pot.
  5. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
  6. Add the mussels and clams to the pot and cook until the shells open, about 5 minutes.
  7. Discard any mussels or clams that do not open.
  8. Serve the stew immediately.
