Seafood Stew with Saffron and Fennel: A Warm Embrace from the Sea

Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 fennel bulb, chopped
- 1 cup vegetable broth
- 1/2 cup dry white wine
- 1/4 teaspoon saffron threads
- 1 pound mussels, scrubbed and debearded
- 1 pound clams, scrubbed
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and cook until softened, about 5 minutes.
- Add the garlic and fennel and cook for 1 minute more.
- Add the vegetable broth, white wine, and saffron threads to the pot.
- Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
- Add the mussels and clams to the pot and cook until the shells open, about 5 minutes.
- Discard any mussels or clams that do not open.
- Serve the stew immediately.
