This vegan Alfredo sauce is rich, creamy, and flavorful, and the roasted broccoli adds a delicious charred flavor and some much-needed texture. It's the perfect weeknight meal that can be on the table in under 30 minutes.
Alfredo sauce is a classic Italian dish that is typically made with butter, cream, and Parmesan cheese. This vegan version uses plant-based butter and milk, and nutritional yeast to give it a cheesy flavor. The roasted broccoli adds a delicious charred flavor and some much-needed texture. I first developed this recipe when I was looking for a vegan Alfredo sauce that was both delicious and easy to make. I experimented with different plant-based milks and cheeses, and finally settled on this combination of unsweetened almond milk and nutritional yeast. The result is a creamy, flavorful sauce that is perfect for pasta, vegetables, or even as a dip. I love to serve this vegan Alfredo sauce with roasted broccoli. The charred flavor of the broccoli pairs perfectly with the creamy sauce, and it makes for a satisfying and healthy meal.
