Ingredients
1 block firm tofu, drained and pressed
1 tablespoon olive oil
2 tablespoons soy sauce
1 tablespoon lime juice
1 teaspoon garlic powder

12 ounces broccoli florets
12 ounces bell peppers (any color), cut into chunks
12 ounces zucchini, cut into chunks

Instructions
Preheat oven to 400 degrees F (200 degrees C).
Cut the tofu into 1-inch cubes.
In a large bowl, combine the tofu, olive oil, soy sauce, lime juice, garlic powder, and black pepper. Toss to coat.
Add the broccoli, bell peppers, zucchini, and cherry tomatoes to the bowl and toss to coat.
Thread the tofu and vegetables onto skewers.
