Ingredients
1 can (15 ounces) chickpeas, rinsed and drained
1/2 cup chopped onion
1/2 cup chopped parsley
1/2 cup chopped cilantro
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1/4 teaspoon ground black pepper
1/4 cup za'atar seasoning
Instructions
Preheat oven to 400 degrees F (200 degrees C).
In a large bowl, combine the chickpeas, onion, parsley, cilantro, cumin, coriander, cinnamon, black pepper, and za'atar seasoning.
Mash the chickpeas with a fork or potato masher until they are mostly smooth, but still have some texture.
Form the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
Bake for 15-20 minutes, or until the falafel bites are golden brown.
