Ingredients
  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 1/2 cup chopped onion
  • 1/2 cup chopped parsley
  • 1/2 cup chopped cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground black pepper
  • 1/4 cup za'atar seasoning
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large bowl, combine the chickpeas, onion, parsley, cilantro, cumin, coriander, cinnamon, black pepper, and za'atar seasoning.
  3. Mash the chickpeas with a fork or potato masher until they are mostly smooth, but still have some texture.
  4. Form the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
  5. Bake for 15-20 minutes, or until the falafel bites are golden brown.
  6. Serve with your favorite dipping sauce.
