This creamy avocado and lime pasta is a quick and easy weeknight dinner that's packed with flavor. The avocado provides a creamy base, while the lime juice adds a bright and tangy flavor. The red onion and cilantro add a bit of crunch and freshness, and the walnuts or pecans add a touch of nutty flavor. This pasta is also a great way to use up leftover avocadoes.
I first developed this recipe a few years ago when I was looking for a quick and easy weeknight dinner that was also healthy and flavorful. I had some leftover avocadoes in my fridge, and I was trying to figure out what to do with them. I decided to mash them up and add them to some cooked pasta, along with some lime juice, olive oil, red onion, and cilantro. The result was a delicious and creamy pasta that was also really easy to make. I've been making this pasta ever since, and it's become one of my favorite go-to recipes.
