Ingredients
12 ounces (340g) spaghetti or other pasta
1 tablespoon olive oil

1 red bell pepper, finely chopped
1/2 cup (120ml) Thai peanut sauce (see recipe below)
1/4 cup (60ml) chopped peanuts
1/4 cup (60ml) chopped cilantro
Instructions
Cook the pasta according to package directions.
While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
Add the red bell pepper to the skillet and cook until tender, about 5 minutes more.
Stir in the peanut sauce and bring to a simmer.
Add the cooked pasta to the skillet and toss to coat.
Stir in the peanuts and cilantro.
Serve immediately.
