Edamame and Avocado Sushi Rolls
These sushi rolls are a delicious and healthy way to get your vegan sushi fix. They're made with edamame, avocado, cucumber, and carrots, and they're rolled in a sheet of nori seaweed. The rolls are then drizzled with a sweet and tangy soy sauce dipping sauce.

Ingredients
  • 1 cup cooked edamame
  • 1 ripe avocado, peeled and pitted
  • 1/2 cucumber, sliced into thin strips
  • 1/2 carrot, sliced into thin strips
  • 1 sheet nori seaweed
  • 1/4 cup cooked brown rice
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
Instructions
  1. Place the nori seaweed on a bamboo rolling mat. Spread the brown rice evenly over the nori, leaving a 1-inch border at the top. Arrange the edamame, avocado, cucumber, and carrots in a line across the center of the rice.
  2. Starting from the bottom, roll the nori up tightly, pressing firmly to seal. Wet the exposed strip of nori with water to help it stick.
  3. Slice the sushi roll into 8 pieces. Serve with soy sauce for dipping.
  4. To make the soy sauce dipping sauce, combine the soy sauce and rice vinegar in a small bowl. Stir until well combined.
