Ingredients
  • 1 baguette, sliced into 1-inch thick pieces
  • 1/4 cup olive oil
  • 1/2 cup chopped red onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped zucchini
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped fresh basil
  • 1/4 cup crumbled feta cheese
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Brush baguette slices with olive oil and place on a baking sheet.
  3. Bake for 10-12 minutes, or until golden brown.
  4. In a bowl, combine the red onion, green bell pepper, zucchini, tomatoes, basil, and feta cheese.
  5. Season with salt and pepper to taste.
  6. Spread the vegetable mixture on the toasted baguette slices.
