Ingredients

  • 1 cup brown lentils, rinsed and sorted

  • 2 carrots, chopped
  • 2 celery sticks, chopped
  • 1 cup vegetable broth
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large pot, combine the beetroot, lentils, onion, carrots, celery, vegetable broth, thyme, and rosemary. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the lentils are tender.
  3. Transfer the lentil mixture to a 9x13-inch baking dish.
  4. In a separate bowl, mash the potatoes with the milk, butter, and salt and pepper to taste.
  5. Spread the mashed potatoes over the lentil mixture and bake for 20 minutes, or until the potatoes are golden brown.
  6. Let cool for 10 minutes before serving.
