Healing Green Goddess Soup
This dairy-free, creamy soup is packed with vitamins and minerals, and it's also incredibly delicious. The coconut milk and avocado give it a rich, satisfying flavor.
This recipe was inspired by a trip to Thailand, where I had a similar soup at a local restaurant. I was so impressed by the flavor that I decided to recreate it at home. After a few tries, I finally came up with this recipe, which I think is even better than the original. I've made it for my friends and family many times, and they all love it.

Ingredients
  • 1 tablespoon coconut oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 celery stalks, chopped
  • 2 cups chicken or vegetable broth
  • 1 cup coconut milk
  • 3 cups packed spinach
  • 1 avocado, peeled and pitted
Instructions
  1. Heat coconut oil in a soup pot over medium heat.
  2. Add onion, garlic, and celery and sauté until softened.
  3. Pour in chicken broth and coconut milk and bring to a boil.
  4. Add spinach and cook until wilted.
  5. Remove from heat and let cool slightly.
  6. Add avocado and blend until smooth.
  7. Serve garnished with a drizzle of coconut milk and fresh parsley.
