Ingredients
  • 2 medium zucchini
  • 2 tablespoons olive oil
  • 1 pint cherry tomatoes
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Line a baking sheet with parchment paper.
  3. Toss zucchini noodles with olive oil, salt, and pepper.
  4. Spread zucchini noodles on prepared baking sheet.
  5. Roast in preheated oven for 15 minutes.
  6. While zucchini noodles are roasting, toss tomatoes with olive oil, salt, and pepper.
  7. Spread tomatoes on a separate baking sheet lined with parchment paper.
  8. Roast in preheated oven for 20 minutes.
