Ingredients
  • 1 whole chicken (about 3 pounds)
  • 1 tablespoon olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley
Instructions
  1. Preheat oven to 425°F (220°C).
  2. Remove the chicken from the refrigerator 30 minutes before cooking to bring to room temperature.
  3. Pat the chicken dry with paper towels.
  4. In a small bowl, combine the olive oil, rosemary, thyme, oregano, salt, and pepper.
  5. Rub the herb mixture all over the chicken, including inside the cavity.
  6. Place the chicken in a roasting pan and roast for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) when measured in the thickest part of the thigh.
  7. Let the chicken rest for 10 minutes before carving and serving.
  8. Garnish with fresh parsley before serving.
