Ingredients
  • 1 large collard green leaf
  • 4 oz sliced turkey breast
  • 1/2 avocado, sliced
  • 1/4 cup shredded carrots
  • 1/4 cup cucumber strips
  • 1/4 cup bell pepper strips
  • 1/4 cup sprouts
  • 2 tbsp paleo-friendly hummus
  • 1 tbsp mustard
  • Salt and pepper to taste
Instructions
  1. Blanch the collard green leaf in boiling water for 30 seconds, then immediately transfer to an ice bath.
  2. Lay the collard green leaf flat and layer with sliced turkey, avocado, carrots, cucumber, bell pepper, and sprouts.
  3. Spread hummus and mustard on top and season with salt and pepper.
  4. Tuck in the sides of the collard green leaf and roll it up tightly, similar to a burrito.
  5. Slice the wrap in half and enjoy!
