  • 1/4 cup chopped walnuts
  • 1/4 cup crumbled feta cheese
Instructions
  1. Preheat oven to 400°F (200°C).
  2. Cut spaghetti squash in half lengthwise and scoop out seeds.
  3. Drizzle squash with olive oil and season with salt and pepper.
  4. Place squash cut-side up on a baking sheet and roast for 45-60 minutes, or until tender.
  5. While squash is roasting, heat olive oil in a large skillet over medium heat.
  6. Add onion and red bell pepper and cook until softened.
  7. Add sun-dried tomatoes and spinach and cook until spinach is wilted.
  8. Remove squash from oven and scrape flesh into a large bowl.
