Ingredients
  • 1 large zucchini, spiralized
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped sun-dried tomatoes
  • 1/4 cup chopped olives
  • 1/4 cup pumpkin seeds
  • 1/4 cup nutritional yeast
Instructions
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and bell pepper and cook until softened, about 5 minutes.
  3. Add the zucchini noodles and cook until tender, about 3 minutes.
  4. Stir in the sun-dried tomatoes, olives, pumpkin seeds, and nutritional yeast.
  5. Cook for an additional 2 minutes, or until heated through.
  6. Season with salt and pepper to taste.
