Ingredients
  • 1 cup pitted dates
  • 1/2 cup raw nuts (such as almonds, walnuts, or pecans)
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup paleo-friendly nut butter (such as almond butter or cashew butter)
  • 1 tablespoon honey or maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt
  • 1 tablespoon melted coconut oil
Instructions
  1. Line a 8x8 inch baking pan with parchment paper.
  2. In a food processor, combine the dates, nuts, and coconut until the mixture resembles coarse crumbs.
  3. Add the nut butter, honey or maple syrup (if using), vanilla extract, and sea salt. Process until the mixture is well combined and sticky.
  4. Stir in the melted coconut oil.
  5. Press the mixture firmly into the prepared baking pan.
  6. Refrigerate for at least 2 hours, or overnight.
