2 tbsp miso paste
2 tbsp coconut aminos
1 tbsp olive oil
1 tbsp honey
1 clove garlic, minced
1 tsp sesame seeds
Salt and pepper to taste
Chopped green onions for garnish
Instructions
Preheat the oven to 400°F (200°C).
Slice the eggplants in half lengthwise and score the flesh in a criss-cross pattern.
In a small bowl, mix together miso paste, coconut aminos, olive oil, honey, garlic, salt, and pepper.
Brush the miso mixture over the cut side of the eggplants.
Place the eggplants on a baking sheet, cut side up, and roast in the oven for 30-35 minutes, or until the flesh is tender and caramelized.
Sprinkle sesame seeds over the roasted eggplants.
Garnish with chopped green onions before serving.
Enjoy hot as a side dish or main course!
Why It Works
Scoring the eggplant helps the miso glaze penetrate the flesh more easily.
Roasting the eggplant cut-side up allows the glaze to caramelize and create a crispy exterior.
Adding sesame seeds adds a nutty flavor and a bit of crunch.
