Collard Green and Black Bean Soup
This hearty, flavorful soup is a snap to make and brimming with nutrients. Greens and legumes make a dynamic duo in this easy-to-make soup that’s fully loaded with texture and flavor. The bright and assertive bitterness of the collards and the soft, earthy sweetness of the carrots balance each other perfectly. The black beans bring a meaty texture and up the protein content, while the celery and onion add aromatic depth and sweetness.
Collard greens have been a staple in Southern cuisine for centuries, and for good reason: they’re incredibly nutritious and versatile. Black beans are another powerhouse ingredient, packed with protein, fiber, and antioxidants. When these two powerhouses come together in this soup, they create a symphony of flavors and textures that will warm you from the inside out. The best part about this soup is that it’s incredibly easy to make. Simply sauté some aromatics, add the collard greens and black beans, and simmer until the greens are tender. You can customize this soup to your liking by adding other vegetables, such as diced tomatoes or corn, or by using a different type of broth, such as vegetable or beef broth.
