This broccoli bacon breakfast hash is a hearty and flavorful way to start your day. The bacon adds a smoky flavor to the dish, while the broccoli provides a healthy dose of fiber and vitamins. The eggs are cooked right in the hash, so you can have a complete breakfast in one pan.
This recipe was inspired by a breakfast I had at a local diner. The hash was so good that I knew I had to recreate it at home. I experimented with different ingredients and proportions until I came up with this recipe. It's now one of my favorite breakfast dishes.
Prep time: 15 | Cook time: 20 | Serves: 4
Ingredients
1 lb uncured bacon, chopped
1 large head of broccoli, cut into florets
1 small onion, diced
2 cloves garlic, minced
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
4 eggs
Instructions
In a large skillet, cook the chopped bacon over medium heat until crispy.
Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.
Add the garlic, broccoli florets, paprika, garlic powder, onion powder, salt, and pepper to the skillet. Cook until the broccoli is tender.
Return the cooked bacon to the skillet and mix everything together.
Create 4 wells in the hash mixture and crack an egg into each well.
Cover the skillet and cook until the eggs are cooked to your liking.
Serve hot and enjoy!
Why It Works
The combination of bacon, broccoli, and eggs is a classic for a reason. The bacon adds flavor and richness, the broccoli provides a healthy balance, and the eggs are a protein-packed way to start your day.
Cooking the bacon until crispy gives it a smoky flavor that infuses the entire dish.
