Broccoli and Bacon Breakfast Hash

Ingredients
  • 1 lb uncured bacon, chopped
  • 1 large head of broccoli, cut into florets
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 4 eggs
Instructions
  1. In a large skillet, cook the chopped bacon over medium heat until crispy.
  2. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.
  3. Add the diced onion to the skillet and sauté until translucent.
  4. Add the garlic, broccoli florets, paprika, garlic powder, onion powder, salt, and pepper to the skillet. Cook until the broccoli is tender.
  5. Return the cooked bacon to the skillet and mix everything together.
  6. Create 4 wells in the hash mixture and crack an egg into each well.
  7. Cover the skillet and cook until the eggs are cooked to your liking.
  8. Serve hot and enjoy!
