Ingredients
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/4 cup flaxseed meal
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup honey
  • 1/4 cup coconut oil, melted
  • 2 eggs
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Line a muffin tin with paper liners.
  3. In a large bowl, combine the almond flour, coconut flour, flaxseed meal, baking soda, and salt.
  4. In a separate bowl, whisk together the honey, coconut oil, and eggs.
  5. Add the wet ingredients to the dry ingredients and mix until just combined.
  6. Fill the prepared muffin tins 2/3 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for a few minutes before enjoying.
