Ingredients
  • 1 pound boneless, skinless chicken breasts, sliced
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 1/2 cup sliced bell pepper (any color)
  • 1/4 cup chopped onion
  • 2 tablespoons coconut oil
Instructions
  1. Heat coconut oil in a large skillet or wok over medium-high heat.
  2. Add chicken and cook until browned on all sides.
  3. Add broccoli, cauliflower, carrots, celery, bell pepper and onion.
  4. Stir-fry until vegetables are tender-crisp, about 5-7 minutes.
  5. Season with salt and pepper to taste.
  6. Serve immediately.
