Balancing Quinoa and Lentil Salad
A hearty and flavorful salad that's perfect for a light lunch or dinner. Ingredients
  • 1 cup quinoa
  • 1 cup brown lentils
  • 1 cup chopped broccoli florets
  • 1 cup chopped carrots
  • 1 cup chopped red bell pepper
  • 1/2 cup chopped walnuts
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
Instructions
  1. Cook the quinoa and lentils according to package directions.
  2. While the quinoa and lentils are cooking, prepare the vegetables.
  3. Combine the cooked quinoa, lentils, vegetables, walnuts, and parsley in a large bowl.
  4. Whisk together the olive oil, lemon juice, honey, and salt and pepper to taste in a small bowl.
  5. Pour the dressing over the salad and toss to coat.
  6. Serve immediately or chill for later.
