Ingredients
12 large white mushrooms
2 tablespoons coconut oil
1/2 cup chopped onion
2 cloves garlic, minced
1/2 cup chopped roasted red peppers
1/4 cup chopped walnuts
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh rosemary
Instructions
Preheat oven to 375°F (190°C).
Remove the stems from the mushrooms and finely chop them.
Wipe the mushroom caps clean and place them on a baking sheet.
In a large skillet over medium heat, melt the coconut oil.
Add the onion and garlic and cook until softened.
Add the chopped mushroom stems, red peppers, walnuts, basil, and rosemary to the skillet.
Cook until the mixture is warm and fragrant.
Fill the mushroom caps with the stuffing mixture.
