Hydrating: Watermelon, Strawberry, and Chia Seed Cooler
This hydrating cooler is the perfect way to cool down on a hot summer day. It's made with watermelon, strawberries, chia seeds, and lime juice, and it's naturally sweetened with honey or maple syrup. The chia seeds add a boost of fiber and protein, making this cooler a healthy and refreshing snack.
I first came up with this recipe when I was looking for a way to use up some leftover watermelon. I had already made a batch of watermelon agua fresca, but I wanted something a little more substantial. I added some strawberries, chia seeds, and lime juice, and the result was this delicious and refreshing cooler.
Prep time: 5 | Cook time: 0 | Serves: 4
Ingredients
4 cups cubed seedless watermelon
1 cup hulled strawberries
1/4 cup chia seeds
1/4 cup water
1 tablespoon lime juice
1/4 teaspoon vanilla extract
Pinch of sea salt
Optional: 1 tablespoon honey or maple syrup (for a touch of sweetness)
Instructions
In a blender, combine the watermelon, strawberries, chia seeds, water, lime juice, vanilla extract, and salt.
Blend until smooth.
If desired, add honey or maple syrup to taste.
Pour the cooler into glasses and enjoy immediately.
Why It Works
The watermelon and strawberries are both hydrating fruits, and the chia seeds add a boost of fiber and protein.
The lime juice adds a bit of tartness and brightness to the cooler.
The honey or maple syrup adds a touch of sweetness, but it's optional, so you can adjust it to your taste.
