The inspiration for these energy bars came to me one day when I was feeling particularly sluggish. I had been working long hours, and my diet had been less than stellar. I knew I needed something to give me a boost, but I didn't want to resort to sugary snacks or processed foods.

Ingredients
1 cup almond butter
1/2 cup pitted dates
1/4 cup maca powder
1/4 cup ground flaxseed
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1 tablespoon honey
1 teaspoon vanilla extract
Instructions
Line an 8x8 inch baking pan with parchment paper.
In a large bowl, combine all of the ingredients.
Press the mixture into the prepared pan.
Refrigerate for at least 2 hours, or overnight.
Cut into bars and enjoy!
