Hydrating: Watermelon, Coconut Water, and Chia Seed Cooler
This hydrating cooler is the perfect way to cool down on a hot summer day. It's made with watermelon, coconut water, chia seeds, lime juice, and sea salt, and it's naturally sweetened with honey or maple syrup, if desired.
I first came up with this recipe when I was looking for a way to use up some leftover watermelon. I had also been reading about the health benefits of chia seeds, and I thought they would be a great addition to the cooler. The lime juice and sea salt add a bit of brightness and flavor, and the honey or maple syrup sweetens it up just enough. This cooler is now one of my favorite summer drinks, and I hope you enjoy it as much as I do!

Ingredients
  • 2 cups cubed watermelon
  • 1 cup coconut water
  • 1/4 cup chia seeds
  • 1/4 cup lime juice
  • 1/4 teaspoon sea salt
  • Honey or maple syrup (optional, to taste)
  • Fresh mint or basil leaves, for garnish (optional)
Instructions
  1. Combine the watermelon, coconut water, chia seeds, lime juice, and sea salt in a blender and blend until smooth.
  2. Taste and add honey or maple syrup, if desired.
  3. Pour the cooler into glasses and garnish with fresh mint or basil leaves, if desired.
  4. Serve immediately.
