Nourishing Quinoa and Black Bean Salad
This quinoa and black bean salad is a healthy and flavorful dish that is perfect for a light lunch or dinner. Ingredients
  • 1 cup quinoa, rinsed and drained
  • 1 cup canned black beans, rinsed and drained
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
Instructions
  1. Cook the quinoa according to package directions.
  2. In a large bowl, combine the quinoa, black beans, red bell pepper, cucumber, red onion, and cilantro.
  3. In a small bowl, whisk together the olive oil and lime juice.
  4. Pour the dressing over the salad and toss to coat.
  5. Season with salt and pepper to taste.
  6. Serve immediately or chill for later.
