Thyroid-Supporting Roasted Sweet Potatoes with Cinnamon

Ingredients
2 pounds sweet potatoes, peeled and cubed
1 tablespoon olive oil
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat oven to 400 degrees F (200 degrees C).
In a large bowl, combine the sweet potatoes, olive oil, cinnamon, salt, and pepper. Toss to coat.
Spread the sweet potatoes on a baking sheet and roast for 20-25 minutes, or until tender and slightly browned.
Remove from oven and let cool for a few minutes before serving.
