Thyroid-Enhancing Sweet Potato and Black Bean Tacos

Ingredients
2 sweet potatoes, peeled and diced
1 (15 ounce) can black beans, rinsed and drained

1 red bell pepper, chopped

1 tablespoon taco seasoning
1/2 cup water
12 corn tortillas
Instructions
Preheat oven to 400 degrees F (200 degrees C).
Place sweet potatoes on a baking sheet and roast for 20-25 minutes, or until tender.
Meanwhile, heat a large skillet over medium heat. Add black beans, onion, bell pepper, cilantro, and taco seasoning. Cook for 5-7 minutes, or until vegetables are softened.
Add water to the skillet and bring to a simmer. Reduce heat to low and simmer for 10 minutes, or until liquid has been absorbed.
To assemble tacos, place sweet potatoes on a tortilla and top with black bean mixture. Serve immediately.
