Ingredients
  • 2 sweet potatoes, peeled and diced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 onion, chopped
  • 1 red bell pepper, chopped
  • 1/4 cup chopped cilantro
  • 1 tablespoon taco seasoning
  • 1/2 cup water
  • 12 corn tortillas
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Place sweet potatoes on a baking sheet and roast for 20-25 minutes, or until tender.
  3. Meanwhile, heat a large skillet over medium heat. Add black beans, onion, bell pepper, cilantro, and taco seasoning. Cook for 5-7 minutes, or until vegetables are softened.
  4. Add water to the skillet and bring to a simmer. Reduce heat to low and simmer for 10 minutes, or until liquid has been absorbed.
  5. To assemble tacos, place sweet potatoes on a tortilla and top with black bean mixture. Serve immediately.
