I first came up with this recipe when I was looking for a way to use up some leftover zucchini. I had been reading about the health benefits of zucchini, including its ability to support thyroid health. I decided to try spiralizing the zucchini and cooking it in a marinara sauce. The dish was a hit with my family, and I've been making it ever since.
