Ingredients
1 pound smoked salmon, flaked
2 pounds asparagus, trimmed and cut into 2-inch pieces
1 avocado, peeled and sliced
1/2 cup red onion, thinly sliced
1/4 cup fresh parsley, chopped
1/4 cup fresh dill, chopped
2 tablespoons lemon juice
1 tablespoon olive oil
Salt and pepper to taste
Instructions
Bring a large pot of salted water to a boil.
Add the asparagus and cook for 2-3 minutes, or until tender-crisp.
Remove the asparagus from the pot and place in a bowl of ice water to stop the cooking process.
Once the asparagus is cool, drain it and pat it dry.
In a large bowl, combine the smoked salmon, asparagus, avocado, red onion, parsley, and dill.
In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
Pour the dressing over the salad and toss to coat.
Serve immediately.
