Ingredients
  • 1 pound smoked salmon, flaked
  • 2 pounds asparagus, trimmed and cut into 2-inch pieces
  • 1 avocado, peeled and sliced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
Instructions
  1. Bring a large pot of salted water to a boil.
  2. Add the asparagus and cook for 2-3 minutes, or until tender-crisp.
  3. Remove the asparagus from the pot and place in a bowl of ice water to stop the cooking process.
  4. Once the asparagus is cool, drain it and pat it dry.
  5. In a large bowl, combine the smoked salmon, asparagus, avocado, red onion, parsley, and dill.
  6. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  7. Pour the dressing over the salad and toss to coat.
  8. Serve immediately.
