Chickpea and Avocado Salad with Lemon-Tahini Dressing
This bright and flavorful salad is perfect for a light lunch or dinner. Ingredients
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 1 ripe avocado, peeled, pitted, and diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon tahini
  • Salt and pepper to taste
Instructions
  1. In a medium bowl, combine the chickpeas, avocado, red onion, parsley, and cilantro.
  2. In a small bowl, whisk together the olive oil, lemon juice, tahini, salt, and pepper.
  3. Pour the dressing over the chickpea mixture and toss to coat.
  4. Serve immediately or chill for later.
