Ingredients
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup coconut milk
  • 1/4 cup honey
  • 1/2 teaspoon vanilla extract
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a medium bowl, whisk together the almond flour, coconut flour, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the eggs, coconut milk, honey, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and whisk until just combined.
  5. Fill the prepared muffin cups about 2/3 full.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the pan for a few minutes before transferring to a wire rack to cool completely.
