The idea for these Turkey and Vegetable Meatballs came to me one day when I was trying to think of a way to get my kids to eat more vegetables. I knew that they loved meatballs, so I thought that I would try to make a healthier version of them with some hidden vegetables. I started by grating some zucchini and carrots, and then I added them to a bowl with some ground turkey, almond flour, nutritional yeast, olive oil, oregano, salt, and pepper. I mixed everything together and formed the mixture into meatballs. I then placed the meatballs on a baking sheet and baked them in the oven until they were golden brown. My kids loved the meatballs, and they didn't even realize that they were eating vegetables! I've been making these meatballs ever since, and they're always a hit with my family and friends.
