Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss sweet potatoes with 1 tablespoon olive oil and spread on a baking sheet.
  3. Roast in preheated oven for 20 minutes, or until tender.
  4. Meanwhile, heat 1 tablespoon olive oil in a large skillet over medium heat.

  6. Add black beans, taco seasoning, and water and cook until heated through, about 5 minutes more.
