This recipe for plantain burritos was inspired by a trip to Mexico many years ago. At a small taqueria on the side of the road, I tried a plantain burrito for the first time and was hooked. Ingredients
  • 1 large plantain, peeled and sliced
  • 2 eggs, beaten
  • 1/2 cup chopped bell pepper
  • 1/2 cup chopped onion
  • 1/4 cup chopped cilantro
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup shredded cheddar cheese (optional)
Instructions
  1. Heat a large skillet over medium heat.
  2. Add the plantain slices and cook until golden brown on both sides.
  3. Remove the plantain slices from the skillet and set aside.
  4. Add the eggs to the skillet and cook until scrambled.
  5. Add the bell pepper, onion, cilantro, salt, and black pepper to the skillet and cook until softened.
  6. Return the plantain slices to the skillet and cook until heated through.
  7. Spoon the egg mixture into the plantain slices and top with cheese, if desired.
  8. Fold the plantain slices over the filling and serve.
