Ingredients
1 cup dried elderberries
1/2 cup dried echinacea root
4 cups water
1 cup raw honey
1 tablespoon cinnamon powder
1 teaspoon ground ginger
1/4 teaspoon cloves
Pinch of sea salt
Instructions
In a medium saucepan, combine the elderberries, echinacea root, and water.
Bring to a boil over medium heat, then reduce heat and simmer for 30 minutes, or until the liquid has reduced by about half.
Strain the mixture through a fine-mesh sieve into a clean saucepan.
Stir in the honey, cinnamon, ginger, cloves, and salt.
Bring to a simmer over medium heat, stirring constantly.
Reduce heat and simmer for 10 minutes, or until the syrup has thickened slightly.
Remove from heat and allow to cool slightly.
Store the syrup in a glass jar in the refrigerator for up to 2 weeks.
