Ingredients
  • 1 cup quinoa
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 cup vegetable broth
  • 1/2 cup chopped walnuts
  • 1/4 cup chopped parsley
Instructions
  1. Rinse the quinoa in a fine-mesh sieve.
  2. Heat the olive oil in a medium saucepan over medium heat.
  3. Add the onion, carrot, and celery and saute until softened, about 5 minutes.
  4. Add the quinoa and stir to coat.
  5. Add the vegetable broth and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is cooked through and the liquid has been absorbed.
  7. Remove from heat and stir in the walnuts and parsley.
  8. Serve hot.
