Grilled Octopus with Lemon-Herb Vinaigrette

Ingredients
- 1 pound octopus, cleaned and cut into 1-inch pieces
- 1 tablespoon olive oil
- 1/4 cup lemon juice
- 1 tablespoon chopped fresh oregano
- 1 tablespoon chopped fresh thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Lemon wedges, for serving
Instructions
- Preheat a grill to medium-high heat.
- Toss the octopus with the olive oil, lemon juice, oregano, thyme, salt, and pepper.
- Place the octopus on the grill and cook for 5-7 minutes per side, or until cooked through.
- Remove the octopus from the grill and let it rest for 5 minutes before slicing and serving.
- Serve the octopus with lemon wedges.
