This recipe was inspired by a trip to Italy where I had the pleasure of eating some of the most amazing seafood I have ever tasted. One of my favorite dishes was a red snapper that was crusted with pesto. I was so impressed with the dish that I decided to recreate it at home. After a few tries, I came up with this recipe that is just as delicious as the one I had in Italy.

Ingredients
4 red snapper fillets
1/2 cup almond flour
1/4 cup basil pesto
1 lemon, sliced
Salt and pepper to taste
Instructions
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Season the red snapper fillets with salt and pepper on both sides.
Spread a thin layer of basil pesto on top of each fillet.
Coat the pesto-covered side of the fillets with almond flour.
Place the fillets on the prepared baking sheet and top each with a slice of lemon.
Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and the crust is golden brown.
