Ingredients
1 cup freekeh
2 cups water or broth
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1 sweet potato, peeled and cubed
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
Rinse the freekeh in a fine mesh strainer.
Combine the freekeh, water or broth, olive oil, salt, and pepper in a medium saucepan.
Bring to a boil over medium heat.
Reduce heat to low, cover, and simmer for 15 minutes.
Remove from heat and let stand for 5 minutes, or until the freekeh is cooked through.
Preheat the oven to 425 degrees F (220 degrees C).
Toss the sweet potato cubes with olive oil, salt, and pepper.
Spread the sweet potato cubes on a baking sheet and roast for 20-25 minutes, or until tender.
