Ingredients
1 cup millet
2 cups water
1/2 onion, chopped
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chopped fresh parsley
2 tablespoons tahini
Instructions
Rinse the millet in a fine-mesh sieve.
Combine the millet, water, onion, olive oil, salt, and pepper in a medium saucepan.
Bring to a boil over medium heat.
Reduce heat to low, cover, and simmer for 20 minutes, or until the millet is tender and all of the water has been absorbed.
Fluff the millet with a fork and transfer it to a large bowl.
Stir in the parsley and tahini.
Form the millet mixture into 4 patties.
Heat a large skillet over medium heat.
Cook the patties for 4-5 minutes per side, or until they are golden brown and cooked through.
