Stuffed Mushrooms with Ricotta, Spinach, and Herbs

Ingredients
12 large mushrooms
1 cup ricotta cheese
1/2 cup chopped spinach
1/4 cup chopped fresh herbs (such as basil, oregano, or thyme)
1/4 cup grated Parmesan cheese
1/4 cup olive oil
Salt and pepper to taste
Instructions
Preheat oven to 375 degrees F (190 degrees C).
Remove the stems from the mushrooms and chop them finely.
In a large bowl, combine the ricotta cheese, spinach, herbs, Parmesan cheese, olive oil, salt, and pepper.
Stuff the mushroom caps with the ricotta mixture.
Place the mushrooms on a baking sheet and bake for 15-20 minutes, or until the mushrooms are tender and the filling is set.
Serve immediately.
