Ingredients
  • 4 ripe tomatoes
  • 1 cup cooked quinoa
  • 1 cup cooked chickpeas
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • Salt and pepper to taste
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Cut the tomatoes in half and scoop out the seeds. Season the inside of the tomatoes with salt and pepper.
  3. In a large bowl, combine the quinoa, chickpeas, red onion, parsley, mint, olive oil, salt and pepper. Stuff the tomato halves with the mixture.
  4. Place the stuffed tomatoes in a baking dish and bake for 20-25 minutes, or until the tomatoes are soft and the filling is heated through.
  5. Serve warm and enjoy!
