Chickpea and Avocado Salad with Lemon Tahini Dressing
This chickpea and avocado salad is a refreshing and flavorful dish that is perfect for a light lunch or dinner. This recipe was inspired by a trip to the Middle East, where I had the pleasure of trying many different chickpea salads. I was particularly impressed by one salad that was made with avocado, red onion, and herbs. The flavors were so well-balanced and the salad was so refreshing, I knew I had to recreate it at home. When I got back to the States, I experimented with different ingredients and proportions until I came up with this recipe. Ingredients
  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 1 ripe avocado, peeled and diced
  • 1/2 cup chopped red onion
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup lemon tahini dressing (see recipe below)
  • Salt and pepper to taste
Instructions
  1. Combine the chickpeas, avocado, red onion, parsley, mint, and lemon tahini dressing in a large bowl.
  2. Season with salt and pepper to taste.
  3. Toss to combine and serve immediately.
