Pomegranate and Pistachio Crusted Lamb

Ingredients
  • 1 rack of lamb
  • 1/2 cup of pomegranate seeds
  • 1/2 cup of chopped pistachios
  • 1/4 cup of olive oil
  • 1 tablespoon of dried oregano
  • 1 tablespoon of dried thyme
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a small bowl, combine the pomegranate seeds, pistachios, olive oil, oregano, thyme, salt, and pepper.
  3. Rub the mixture all over the lamb.
  4. Place the lamb on a baking sheet and roast for 25-30 minutes, or until the lamb is cooked to your desired doneness.
  5. Let the lamb rest for 10 minutes before slicing and serving.
