I first came up with this recipe when I was looking for a way to use up some leftover mango. I had already made a few different mango dishes, but I wanted something that was a little bit different. I started experimenting with different spices and flavors, and I finally came up with this curry-mango glaze. I love the way the sweet and savory flavors of the glaze complement the pork. It's a dish that is both easy to make and delicious, and it's perfect for a weeknight meal.

Why It Works
  • The curry-mango glaze is a great way to add flavor to pork tenderloin. The mango adds a sweetness that balances out the savory flavors of the curry and the pork.
  • The coconut aminos add a umami flavor to the glaze. They also help to caramelize the glaze, giving it a beautiful golden brown color.
  • The pork tenderloin is a lean cut of meat that is easy to cook and very tender.
