This kale and quinoa salad is a refreshing and flavorful side dish that's perfect for any occasion. The quinoa provides a hearty base, while the kale adds a pop of color and nutrients. The red onion and parsley add a bit of sweetness and crunch, and the lemon vinaigrette ties it all together with a bright and tangy flavor.
This salad was inspired by a trip I took to Italy a few years ago. I was in Tuscany, and I had the most amazing kale salad at a little trattoria in the countryside. The salad was so simple, but it was so flavorful and delicious. I knew I had to recreate it when I got home.
